Не стоит переживать, что мясо выйдет суховатым. Благодаря «тулупу» из брюшины, который будет препятствовать потере сока, корейка получится изысканной и очень сочной.

ИНГРЕДИЕНТЫ

  • 1,5 кг свиной корейки
  • 1,5 кг свиной брюшины с кожей
  • 1 головка чеснока
  • 50 г зелени (укроп, петрушка, базилик)
  • 1/4 ч. л. соли
  • 1/4 ч. л. молотого перца

ПРИГОТОВЛЕНИЕ

  1. Если ты купила корейку на кости, аккуратно отдели ее от мяса. Затем очисти ножом шкуру брюшины.

  2. Мелко нарежь зелень и чеснок.

  3. Сделай несколько надрезов на брюшине со стороны мяса, почти до самой кожи. Со стороны шкуры тоже сделай надрезы крест-накрест.

  4. Посоли и поперчи со всех сторон корейку и брюшину. Положи зелень на мясную часть брюшины.

  5. Уложи корейку на брюшину и оберни ею, насколько это возможно. Полученный рулет завяжи с помощью кулинарной бечевки. Поставь блюдо на 24 часа в холодильник.

  6. По истечении указанного времени помести рулет в духовку и выпекай при температуре 160 градусов около 4 часов. Периодически поливай мясо горячей водой, а затем образовавшимся соком.
