Ավագ սերնդի մարդիկ շատ լավ են հիշում, թե ինչ ուտեստներ են ավանդաբար եղել Նոր տարվա սեղանին խորհրդային մարդկանց համար: Իհարկե, դա մանդարինն է, մայրաքաղաքային աղցանը, լիմոնադը, Հայաստանում՝ հաստատապես տոլման, և այլն: Իսկ ինչ վերաբերում է ալկոհոլային խմիչքներին, ապա անկասկած Ամանորի ամենատարածված խմիչքներից մեկը եղել է «Սովետական շամպայնը»: 1924 թվականին ԽՍՀՄ-ում չոր օրենքի չեղարկումից հետո խնդիր էր առաջացել բնակչության համար մատչելի և համեղ ըմպելիք ստեղծել: Պետք էր այնպիսի խմիչք, որը կարող էր սպառվել բոլորի կողմից` անկախ եկամուտներից: Ուստի կառավարության ղեկավարներից մեկի՝ Ալեքսեյ Ռիկովի նախաձեռնությամբ որոշվել է հանձնարարել գինեգործներին՝ լուծել այդ խնդրը:

Անհրաժեշտ է եղել ստեղծել էժանագին, համեղ փրփրուն գինու բաղադրատոմս: Դա արել է շամպայնի և փրփրուն գինիների հայտնի խորհրդային մասնագետ Անտոն Միխայլովիչ Ֆլորով-Բագրեևը, որը ահռելի ավանդ ունի ԽՍՀՄ-ում գինեգործության զարգացման գործում: Նա իր ոլորտի գործունեության մեջ մեծ փորձ է ունեցել, քանի որ այցելել էր շատ երկրներ և պարզել արտասահմանյան շատ գինիների պատրաստման գաղտնիքները: Ֆլորով-Բագրեևը նաև աշխատել էր Աբրաու-Դյուրսոյում փրփրուն գինիների արտադրությունում՝ որպես առաջատար գինեգործ: Գինեգործը իր ամբողջ գիտելիքներն է ներդրել կուսակցության առաջադրած խնդիրը լուծելու համար: Նա ստեղծել է շամպայն ստանալու սարք, որը կոչվում էր «Ֆլորով-Բագրեևի համակարգի ակրատոֆոր»: Դրանում խմիչքի ստացման համար խաղողահյութը խմորվում էր 28 օր, այնուհետև սառեցվում, և միայն դրանից հետո էր պատրաստի շամպայնը շշալցվում:

Ամբողջ գործընթացի տևողությունը ոչ ավելի է, քան մեկ ամիս: Բայց այս շամպայնի ստացման եղանակը ուներ իր թերությունը: Նման երկարատև խմորման ընթացքում շամպայնի նուրբ բույրն ու համը այն չէր ստացվում, ինչ պետք էր: Բայց, մյուս կողմից, պատրաստի արտադրանքը էժան էր, ինչը և պլանավորված էր իրականացնել: Այսպիսով, խնդիրը լուծվել էր: Արդյունքում, 1937 թվականին հայտնվել է «Սովետական շամպայնի» առաջին խմբաքանակը, իսկ զանգվածային արտադրությունը սկսվել է միայն երկու տարի անց: Ներկայումս էլ հետխորհրդային տարածքներում շամպայն հիմնականում պատրաստվում է ըստ նույն տեխնոլոգիական գործընթացի, ինչպես պատրաստվել է «Սովետական շամպայնը», բայց, իհարկե, ներկայումս այն տարբեր անուններ ունի: «Սովետական շամպայնն» իր արժանի տեղն է զբաղեցրել գինեգործության պատմության մեջ և իրավամբ կարող է համարվել հետխորհրդային երկրների մշակույթի մի մասը:
