Այսօր պատրաստելու ենք թարմ վարունգով և շքեղ տանձով աղցան, որն իսկական հրավառություն է ստեղծում բերանում։ Բաղադրիչները կարող եք ավելացնել կամ փոխարինել ըստ ձեր խոհարարական նախասիրությունների։

  • Վարունգ — 3 հատ
  • Պղպեղ — 2 հատ
  • Ապղտած միս — 100 գր․
  • Տանձ -1 հատ
  • Քունջութ՝ սև և սպիտակ
  • Դդմի սերմեր, կարելի նաև արևածաղկի
  • Զեյթունի ձեթ
  • Սոյայի սոուս

Շքեղ աղցանի պատրաստման եղանակը

  • Սկսենք նախապատրաստել բաղադրիչները
  • Ապխտած միսը կտրատում ենք երկարությամբ և լայնակի, ահա այսպես, կարող եք նաև այն փոխարինել տավարի մսով կամ երշիկով
  • Գազօջախի վրա տաք թավայի մեջ ձիթայուղ ենք լցնում և ապխտած միսը շարում ենք մեջը
  • Վրան ավելացնում ենք սպիտակ քունջութ և սկսում ենք տապակել, անընդհատ խառնում ենք 1-2 րոպե վարդագույն կդառնան բաղադրիչները և վերցնում ենք կրակից
  • Աղցանի հիմնական բաղադրիչը թարմ վարունգն է, այն ոչ թե կտրատելու ենք, այլ քերիչով երկար և բարակ շերտերի ենք վերածելու, նման կերպ աղցանը շատ էլեգանտ տեսք է ստանում
  • Այս աղցանը ես փորձել եմ իտալական ռեստորանում և այն դարձել է իմ խոհանոցի շքեղ աղցաններից մեկը

  • Այժմ հավաքում ենք աղցանը, տակի շերտը վարունգն է, այնուհետև պղպեղները, վրան տանձն ենք շարում, վրան լցնում ենք տապակած ապխտած միսն ու քունջութը և չենք խառնում, մատուցելու ենք այսպես բրգաձև՝ առանց խառնելու
  • Սև քունջութ ենք վրան շաղ տալիս և դդմի սերմեր, որոնք կարելի է փոխարինել արևածաղկի կամ ցանկացած այլ սերմերով
  • Զեյթունի ձիթայուղ ենք լցնում աղցանի վրա
  • Սոյայի սոուս ենք լցնում, այդ դեպքում այլևս աղ չենք անում, քանի որ սոյայի սոուղը արդեն աղի է,  ես աղցանների մեջ սովորաբար սոյայի սոուս շատ եմ օգտագործում։
